Banana pancake with blueberry jam

The perfect breakfast pancake for a cyclist! It contains a lot of protein in the form of eggs and is both lactose and gluten free. The blueberry jam is also sugar free.

Pancakes

2 ripe bananas

4 eggs

25 g rice flour

1 tsp cinnamon

1 tsp ground cardamom

2 tsp baking powder

(2 tsp coconut oil)

1 mix all the ingredient in a big bowl using a hand blender for a smooth battler

2 fry the pancakes until golden in a frying pan preferably using coconut oil
